Green Tea

Green Teas, or Lü Cha, are not oxidized. Instead, when they are picked they are immediately heated to stop the natural oxidation in a process called kill green. Then the leaves are shaped and dried. The traditional Chinese method of kill green involves gently pan-frying the leaves which produces teas that are light in color and body with nutty, fruity, and floral flavors. On the other hand, the traditional Japanese method of kill green uses a steaming process that gives leaves a vegetal, oceanic, grassy, and sweet melody of flavors. All of our green teas from other regions have been processed in the Chinese style.

An excellent, very distinguished organic Japanese green tea, its delicious taste and fresh grassy scent of spring offer a touch of heaven in your cup. This tea is one of the most valued products of the Nippon Islands. It is picked by hand near the city of Uji in specially shaded fields and guarantees a rare experience, enhanced by an original method of preparation. Dark green, flat, subtle leaves of uniform size give a fresh aroma and a characteristically bold taste. Gyokuro tea is much prized as the “champagne of green teas,” denoting its high value, delicacy, and renown. It is usual to make several infusions from the same leaves, allowing the superior quality of this tea to be fully enjoyed.

Translating to "rough tea," this organic Japanese green tea is a bit less vegetal and grassy than most other Japanese green teas because its leaves are harvested in the dry summer. A larger, flat, light green leaf with yellow tints, it carries a mature, smooth taste and is easy to drink, with the characteristic freshness and umami of Japanese green teas.

Matcha is a first class type of powdered, extra-fine ground tea that is used for the Japanese tea ceremony, Chanoyu, during which the tea is whisked with a bamboo tool called a chasen, in a handcrafted bowl called a chawan. Quality Matcha is always a pea-green, extra-fine powder with a distinctive, grassy aroma. The foamy infusion is fresh and deep green with an unforgettable, intense taste. Its health benefits are endless! We recommend that it be enjoyed after dessert or with a Japanese sweet, but never drink it on an empty stomach!

Matcha is available in three distinct certified organic grades coming to us from Uji, Japan.

Matcha Natural is our base grade here at Dobra, and is the peer of the higher quality matcha typically served in the US. Matcha Natural is a great choice for those just starting to experience matcha or who are blending it to accentuate other flavors. This type of tea is often a by-product of Hojicha, but our variety is made from the same bushes and leaves used for Gyokuro, giving its sly flavor the finesse and freshness of Gyokuro. A delicate, yet robust organic tea of roasted leaves and stalks, which give a taste and aroma unlike that of any other Japanese teas. The name means "lightly roasted tea." The infusion is golden brown. The aroma is reminiscent of freshly baked bread, roasted grains, toasted oak, or chestnuts with a hint of sweet caramel. Each sip carries the feeling of sitting by a fire while reminiscing about the seaside.
