A traditionally processed green tea produced from 100 year old tea trees by Dao tea farmers in the Vietnamese mountains of Hà Giang, more than 1000m above sea level. The age of the trees give a flavor unlike other green teas; the deep flavor is most similar to other ancient tree teas such as Lao Shu Pu’er.
Ché Xanh, a remarkable Vietnamese green tea whose leaves are picked with extraordinary care, has reserved a special place on our menu. It has a strong, vegetal and astringent infusion not unlike grilled asparagus. Good to awaken a drifting mind.

Grown on the Jirisan mountain range on the southern Korean coast, this light infusion conceals a brilliant complexity of flavor on the boundary between Chinese and Japanese teas. The leaves are gently pan-roasted to seal in their freshness, hand rolled, and then baked at low temperatures to complete the drying process. This process offers a rich flavor with a bready, nut-like complexity. We serve the small size of this tea in a traditional tea vessel from Korea.
