White Teas, or Bai Cha, are the least processed type of tea. The leaves are simply left to wither and dry in the sun, giving them only a faint oxidation (less that 15%). This gives them a light, floral taste and a velvet texture. Some white teas, like Ya Bao and Yin Zhen, are picked with a high number of new-growth buds. Tea buds bring a sweet, pollen flavor to the tea that is sure to delight.
